Definition:

n. A polysaccharide polymer that is found in invertebrate exoskeletons, the shells of some mollusks, and the cell walls of fungi. Chitin provides structural support and is insoluble in water, alcohol, and dilute acids. The chitin polymer consists of chains of acetylglucosamine (N-acetyl-D-glucos-2-amine) linked together in a similar fashion to the monomers in the cellulose polymer. (Source: Hickman)
